Bacon Cheddar Cakes

Ingredients
- 5 strips bacon fried and crumbled
- 1 cup all-purpose flour
- 1 cup milk
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/2 cup green onions finely chopped
- 2 tbs unsalted butter melted
- 2 tsp baking powder
- 1/4 tsp salt

Instructions
- In a large bowl, mix the flour, sugar, baking soda and salt together.
- Using a wooden spoon, stir in the milk and melted butter with the dry pancake ingredients. Whisk the egg in a separate bowl before adding to pancake mixture.
- Stir in the green onions and cheddar cheese.
- Butter a large skillet, pan or griddle over medium heat.
- Scoop about 1/4 cup of batter on to the grill at a time and then sprinkle some of the bacon crumbles onto the batter.
- Cook each cake until you start to see bubbles, then flip and cook for another 2-3 minutes or until each side is nicely browned and the middles are cooked through.
- Repeat until all batter is used. Garnish with remaining bacon crumbles, cheese and green onion and serve with hot-sauce-maple-syrup combo.
Recipe Notes
Save some extra bacon crumbles, cheddar cheese and green onions for garnish. Mix some maple syrup with your favorite hot sauce for a spicy sweet pancake topping.
