Instructions
  1. In a saucepan (I mean the pan you’re going to cook the soup in), fry the Indiana Kitchen bacon until it’s crisp. Remove the Indiana Kitchen bacon from the pan and crumble it up into little bits. Set it aside for now.

  2. Pour some of the excess fat from the pan, then add the onions, garlic and mushrooms. Over medium-high heat, saute them in the Indiana Kitchen bacon fat until the onions are soft and translucent and the mushrooms are limp.

  3. Add the flour to the pan and stir, coating all your little shrooms, onions and garlic bits in flour.

  4. Add the milk and cook over medium heat, stirring often, for about 5 – 10 minutes or so or until the mixture thickens.

  5. Add the pumpkin puree, shredded cheeses, most of the Indiana Kitchen bacon bits (reserving a few for garnish), and the seasonings and cook for a few minutes longer until the cheese melts.

  6. Just before serving, stir in the beer. The soup will froth up for a moment, but then it will calm down again, just in time to serve it.

  7. Pour into bowls and top with shredded cheese, the reserved Indiana Kitchen bacon bits, and fresh parsley leaves. Some people like to put popcorn on their beer cheese soup. That’s fun too.

  1. Turn grill or oven on high heat, and preheat for 15 minutes

  2. Place ham in center of heavy-duty aluminum foil sheet, and pour brown sugar over ham. Firmly press sugar on to ham, turn and repeat on all sides until ham is covered. Wrap tightly with foil, then add another tightly wrapped layer of foil, so that none of the ham is exposed.

  3. Reduce the heat to low, and place ham on top rack. If this is not possible you will need to place wrapped ham into a foil pan on the lower rack to prevent ham from drying out.

  4. Cook for the next 90 minutes. Do not open the oven door or grill lid at this time.

  5. Once ham is done, remove from grill or oven and let sit for 5 to 10 minutes. Then, remove foil and serve.

Recipe Notes

Tip: When removing foil, do so over a bowl to catch the juice and spoon over the slices.

  1. Preheat grill for indirect heat.

  2. Combine dry ingredients, and blend well.

  3. Rub tenderloin with seasoning mix, coating all sides.

  4. Place pork on grill, but not directly over flame. Close grill lid, and cook over indirect heat until meat thermometer reads 160°, which would be about 20 to 30 minutes.

  5. Remove from grill, and let stand for 5 to 7 minutes before slicing.

Recipe Notes

Kick up the recipe with a Horseradish Sauce

 

2 tablespoons mayonnaise

2 tablespoons sour cream

1 teaspoon prepared horseradish

1/8 teaspoon lemon zest

Touch of salt and pepper to taste

Combine ingredients, and refrigerate until serving.

  1. Preheat grill for high heat.

  2. Put rubber gloves on to avoid burning fingers and eyes. Cut jalapenos in half lengthwise and remove seeds and membrane.

  3. Mix cream cheese and pepper jack cheese in bowl. For extra heat, add some of the seeds back in to cheese mixture.

  4. Fill jalapeno halves with the cheese mixture, then wrap with Indiana Kitchen Bacon, and secure with a toothpick.

  5. Place on grill, and cook until bacon is crispy.

  1. Preheat grill for high heat.

  2. In a medium bowl, mix together brown sugar, vinegar, vegetable oil, and mustard. Thread ham and pineapple chunks alternately onto skewers.

  3. Lightly oil grill grate. Place skewers on the prepared grill, and brush liberally with the brown sugar mixture. Cook for 6 to 8 minutes, turning frequently and basting often. Serve when heated through and richly glazed.
