Preheat oven to 450 degrees F.
Spread half of the chips in a single layer on a baking sheet. Top with half of the nacho cheese. Repeat, using the remaining chips and cheese to form a second layer of each.
Place in oven for 5 to 10 minutes, or until cheese begins to bubble.
Remove from oven and top with pulled pork, green onions, black olives, jalapenos, sour cream and BBQ sauce, as much as desired. Enjoy!

Slow-Cooked Asian Style Baby Back Ribs

No grill? No problem! Just use this crockpot recipe to make ribs so tender they'll fall right off the bone!
With a knife, cut ribs into individual pieces then place in a large Ziploc bag.
In a medium bowl, prepare the marinade by mixing garlic, ginger, brown sugar, honey, sesame oil, rice vinegar, soy sauce, lime juice and olive oil. Add marinade to Ziploc bag with ribs.
Shake, shake, shake the bag to help the marinade soak through the ribs. Refrigerate for 8 hours or overnight.
When ready to cook, put ribs and marinade in a crockpot. Add 1 cup of water and cook on low heat for 9 hours.

Bring a medium pot of lightly salted water to boil. Add pasta and cook according to package directions, but remove from heat and drain when pasta is becoming al dente and just short of finished. (Pasta will finish in oven.)
While pasta is boiling, fry bacon and onion together in oven-safe skillet. Fry until onion is translucent and bacon reaches desired level of doneness. Set bacon-onion mixture aside and remove excess grease, leaving some to coat the skillet.
Prepare the cheese sauce by melting butter in a saucepan over medium-low heat. Gradually add milk and flour, stirring occasionally so that the mixture doesn't burn. Slowly add grated cheddar and Parmesan while stirring.
Mix together pasta, bacon, onion and cheese mixture and add to skillet. Top with bread crumbs. Cook in oven for approximately 30 minutes.

Celebrate the start of summer by firing up your grill and make these tasty BBQ Teriyaki Pork Kebabs! In a shallow dish, mix together 3 of the tablespoons of soy sauce, 1 clove of the mixed garlic, the olive oil and red pepper flakes. Add the pork cubes to mixture, coat evenly, cover the dish and let marinade in the fridge for 3 hours.
In a saucepan, combine beef broth, cornstarch, the other 2 tablespoons of soy sauce, brown sugar, the rest of the minced garlic and the ginger. Bring to a boil while stirring often. Reduce heat and simmer for 5 minutes.
Preheat an outdoor grill to high heat and lightly oil grate. Thread pork pieces on skewers, alternating veggies and pineapple.
Cook on grill for 15 minutes or until meat is finished. Rotate skewers for even cooking, and baste often with sauce while grilling.

Bacon jam goes great on all kinds of things--toast, burgers, BLTs, grilled cheese and other sandwiches, sweet potatoes, brussel sprouts, even ice cream! Try making a jar for dad this Father's Day.
Chop bacon slices down to 1/2-inch slices before cooking. Then fry in a large frying pan over medium-high heat for about 10 minutes, stirring frequently, until bacon pieces are cooked but still chewy.
Use a slotted spoon or tongs to remove bacon pieces from frying pan minus most of the bacon grease. Pour grease out of the pan, leaving about 1 tbsp. in the pan.
Add onion to frying pan and cook for about 10 minutes, then reduce heat to low. Stir in the brown sugar and continue to cook on low for about 20 minutes, or until onions have caramelized.
Add the coffee, 1/2 cup of water and the bacon pieces and increase the heat to medium, stirring occasionally, until the mixture is thick like jam, about 30 minutes.
Remove from heat and stir in the balsamic vinegar. Add salt to taste, if necessary.
Bacon jam will last about one week in the fridge. Bits of white fat from the bacon may appear in jam when cold but will disappear as jam reaches room temperature.
Add hash browns and cook for one minute, stirring frequently. After one minute, add chopped bacon and cook for 8 to 10 minutes, stirring occasionally, until potatoes are browned.
While bacon and potatoes cook, add eggs and taco seasoning to a large bowl and whisk lightly.
Once potatoes have browned, add egg mixture. Stir eggs, bacon and potatoes and cook until egg is nearly finished. Then stir in cilantro, chiles and cheese and cook until cheese has melted. Remove from heat.
Add 1/8 of the egg-bacon-potato filling to each of the tortillas. Roll up into burrito form.
Wrap each burrito in foil and then save in a Ziploc bag or container and store in fridge or cooler.
When ready to cook, put foil-wrapped burritos on grate over low flame or directly on hot coals, heating for 10 to 15 minutes, and turning over once halfway through. Heating time may vary based on intensity of heat.
